Sorry for the long gap in between replies, things got crazy here. Anyway:
Tested restores of 2 separate Server 2008 boxes. Both restores failed. I spent quite some time trying to get them to come up to no avail. I was receiving a BSOD on boot for both devices with the 0x0000007B. This is an inaccessible boot device. From my digging I have discovered that this is due to the physical servers using RAID controllers. The restore setting did not use RAID controllers, which I believe is what is confusing the OS.
Both similar boxes:
Windows Server 2008 R2 Standard SP1
Intel Xeon X3440
8GB Ram
1TB HDD

Xenserver virtual setup with dual vCPUs
1TB VHDD
2GB Ram
