i see that urbackup support encryption for files transfer. nice.
now is it possible to have the file on the backup server itself encrypted ? via a single word for example?

Currently not supported and planned. Client-side encryption would be more interesting, I think.
You can however use software like EFS, TrueCrypt and LUKS to encrypt your server.
