I’m currently evaluating Infscape Appliance as a replacement for our current backup solution. Looks like a nice product but it seems that it still uses Debian 10 which is outdated or am I missing something?

The appliance is based on Debian 11 (bullseye) currently.
Are you referring to the installation instructions under “Install to Cloud Instance” ? If yes, the installation completely replaces the running operating system with the appliance one. The instructions only refer to the OS on which the installation has been tested most. It might (and has) also worked on newer Debian versions.
