Can I remotely change the setting on a client so there is no Tray Icon?
My Clients are already installed and limited, but Id like to hide the tray icon.

Grab the installer without tray icon 
Now if you want to change an already configured setup, i am unsure, but try this:
You get two process :the one for the systray that run as the user and the one that do the actual backup that runs as system.
Maybe try to rename UrBackupClient.exe, it sthe one that runs as the user to UrBackupClient.exe.bak , see if urbackup stills works as expected
