Is there a way to force a client to use internet mode over by default even if backing up over lan? Reason being that only internet mode has encryption.

I see here Incremental block differences backup in Internet mode that you found how to disable it with --internet_only_mode true on either the server or the clients.
You could also have blocked the client ports or put the server in its own subnetwork, or blocked the UDP broadcast packets. (For posteriority)
